Rum is typically made in the Carribeans, South & Latin America. It was created by accident then enjoyed by people because of its taste and effects. Rum started out as waste, from the by produce of making sugar from sugarcane. When you are making sugar from sugarcane, it separates creating sugar, and molasses. Molasses was then sat in vats, left in the sun unattended which caused it to ferment because of the heat. Slaves started to taste it and drink it as it was free since it was considered to be trash. Since these effects seemed to be good, workers started to distill the molasses, bottle it and sell it.
Rum, unlike other spirits, does not have many rules and regulates, such as Bourbon, Tequila, wine, etc.
When it comes to white rum, most people would assume that white rum is not aged, but in fact, many of the white rums we have today are aged for a year then filtered through charcoal to give us, white rum.
Dark rum sometimes is unaged. The color and flavors come from raw molasses and/or caramel to add those colors and flavors into it without aging the spirit. This is however, different for every single rum. It would be best to check each you are interested in, if it matters to you. This rum is most often labeled as, dark or black.
Navy strength rum, is simply rum that is bottled with roughly 60% alcohol (120 proof). Making them stronger than your average rum.
Solera Rum; is a way that a rum is aged. Many dark rums are aged in 1 barrel, distilled, put into the same barrel for up to a year and then blended. With Solera rum, it is distilled, then put through the process of solera. Which is the process of changing the barrel multiple times throughout the aging process, giving it unique flavors from each barrel.
Overproof rum, rums that are between 60% - 75%, usually filtered white rum. These are the rum's typically used to set drinks on fire at bars.
There are however many different variations of rum, from Jamaican, to English to Spanish, etc.
